Persimmon Tree

Diospyros kaki

Fruit Plants & Bushes Difficulty: Easy

📖 About this plant

Persimmon (Diospyros kaki), known as the Japanese persimmon or kaki, is a deciduous fruit tree in the Ebenaceae (ebony) family, prized for its vibrant orange fruits that ripen in late autumn when most other fruits are finished. Native to China where it has been cultivated for over 2,000 years, persimmon spread to Japan (where it is the national fruit, called kaki), Korea, and eventually worldwide. In India, persimmons are grown in the Himalayan regions — Kashmir, Himachal Pradesh, Uttarakhand, and the Nilgiris — where cool winters provide necessary chilling hours. The tree is a beautiful ornamental with glossy dark green oval leaves that turn spectacular shades of orange, red, and purple in autumn. The fruits are large (5-10 cm), round to oblate, and bright orange when ripe, often with a waxy sheen and a four-lobed calyx (cap) at the top. Persimmons are categorized into astringent and non-astringent varieties: astringent varieties (like Hachiya) are mouth-puckeringly tart when firm and only edible when fully ripe and jelly-soft; non-astringent varieties (like Fuyu) can be eaten crisp like an apple. Persimmons are rich in vitamin A (beta-carotene), vitamin C, dietary fiber, manganese, and antioxidant catechins (similar to green tea). They are eaten fresh, dried (a popular Japanese snack called hoshigaki), made into puddings, breads, cookies, jams, and used in savory salads. In traditional Chinese medicine, the calyx and unripe fruit are used for hiccups and digestive issues. The tree is also valued as an ornamental for its stunning autumn color.

Common issues

  • Persimmon wilt (most serious)
  • crown gall
  • anthracnose
  • leaf spot
  • scale insects
  • mealybugs
  • fruit fly
  • sunscald on young bark
  • fruit drop from stress or inadequate pollination

💡 Care tips

  1. Plant in full sun in deep, well-draining soil.
  2. Plant grafted trees (not seedlings — quality and sex are variable from seed; many cultivars are female-only or parthenocarpic).
  3. Plant 2-3 different cultivars for better fruit set (though many persimmons are self-fertile or parthenocarpic — setting fruit without pollination).
  4. Prune in late winter to develop a strong open-center shape with 3-5 main branches
  5. persimmons fruit on current seasons growth from one-year-old wood.
  6. Apply balanced fertilizer in early spring
  7. avoid excessive nitrogen which causes vegetative growth at the expense of fruit.
  8. Thin heavy fruit sets to prevent branch breakage — persimmons can over-bear and break branches.
  9. Water regularly during fruit development
  10. mulch heavily.
  11. Harvest astringent varieties (Hachiya) when fully colored and soft to touch (jelly-like inside)
  12. they ripen further off-tree.
  13. Harvest non-astringent varieties (Fuyu) when fully colored but still firm — they can be eaten like an apple.
  14. In Indian Himalayan regions, popular cultivars include Fuyu (non-astringent), Hachiya (astringent), and locally adapted selections.
  15. Trees begin fruiting 4-6 years from grafting and produce 50-200 fruits annually at maturity.
  16. Protect from late spring frost which damages flowers.
